My Story

Hello and Welcome to our site! I am Chef Idalee and I have been in business since 1982. I began by producing corporate logos in chocolate and also a chocolate truffle known as the “Idalee’s of Texas” which sold in 23 states around the country. I did that for 9-1/2 years in Houston and then sold off part of the company, and put the rest on hold, to go to the Culinary Institute of America in Hyde Park, NY, where I earned my degree in Baking & Pastry Arts. It was quite an honor and memorable experience to learn under such fabulous Master Chefs. I was like a sponge!

After school I returned to Texas and settled in Dallas. I have always had that entrepreneur spirit whether it has been in product development or coaching others on being an entrepreneur. This “Sauce of Diversity” is the “appeal of the deal on the meal”. It enhances the creativity of the Chef, Sous, Cook, or Homemaker. Whether used as is, or as a dipping sauce or as a salad dressing, it has become the “Base you’ll embrace”!

Think of our sauce as your ace in the hole. You can use it as a dipping sauce for fresh or steamed vegetables, a salad dressing or even as a flexible sauce/base for meats, chicken, fish, seafood. Our sauce of diversity can serve any cuisine, hot or cold. See some of our customers’ favorite recipes below!

These options showcase the Sauce Of Diversity and three flavor variations – Honey Mustard, BBQ and Southwestern. These variations go great with grilled or BBQ-styled chicken or fried chicken as part of the salad, as well as different kinds of meat.

THE Sauce: Ketchup, Cream-style Horseradish, Paprika, Kosher Salt, Oregano, Black pepper, Cayenne pepper, and Chef Idalee’s Sauce.

Note: Can be used as a salad dressing and as a dipping sauce.

Sweet Kickin’ Vinaigrette/Marinade: Oil (Corn, Vegetable, Canola), White Distilled Vinegar, Light Brown sugar, Pepper, Cholula sauce, and Chef Idalee’s Sauce.

Honey-Mustard: Yellow Mustard, Cayenne pepper, and Chef Idalee’s Sauce.

Note: Can be used as a salad dressing and as a dipping sauce.

Marinade for Beef or Chicken:  use same vinaigrette salad dressing for a marinade onbeef, chicken.

Macaroni & Cheese: add shredded cheese and pasta and bake . . . scrumptious!

Honey Mustard Salad Dressing:  add yellow mustard and cayenne pepper.

Dipping Sauce for Seafoodadd sriracha sauce.

Excellent as seafood dipping sauce for shrimp and fish dishes.

Thai Dishes:  Add peanut butter; excellent for dipping sauce for Thai dishes.

Add Green chili salsa and use in place of tartar sauce for fried fish.

Remoulade Sauce: Chef Idalee’s sauce flavored with herbs, mustard and capers.

Dipping Sauce:  used with fried chicken.

Russian Salad Dressing:  add ketchup.

Cole slaw base amount depends on your taste; start out small; adjust accordingly
